I'm reposting this from my old blog, but we had it tonight and I wanted to share because now is the time for ZUCCHINI, GREEN PEPPERS and TOMATOES! It's the perfect season to be making this meal. I'm sorry to say that Mr. Peepers (our ground squirrel) has left us without any tomatoes this week so I shamefully used canned tomatoes. But it was still awesome and I topped it with some thinly shaved roast chicken. Even AJY loved the gnocchi (of course she didn't eat the veggies...).
CSA Ladies: If you have an extra zucchini laying around your fridge I would gladly take it off your hands!
INGREDIENTS:
one 18 oz. package of potato gnocchi
one medium zucchini, thinly sliced
one whole green pepper, chopped
2 tbsp olive oil
1/4 cup prepared pesto sauce
one cup of chopped tomato
DIRECTIONS:
Cook gnocchi according to package directions. In a large skillet saute the zucchini and pepper in oil until tender-crisp. Add pesto sauce and gnocchi; stir until heated through. Add tomatoes and serve.
